Okra

Okra is a flowering plant that grows in warm and tropical climates. The parts we commonly eat are the seed pods. They come in red and green and are sometimes called “lady’s fingers”.

It is rich in nutrients including magnesium, folate, fiber, and antioxidants and it supports digestive health and may help regulate blood sugars.

Adding sliced okra to soups or stews is a healthy way to thicken them without flours or creams. It is often used in recipes like gumbo, curries, and stir-fries and can be enjoyed fried, pickled, or roasted.
