Spaghetti Squash

Spaghetti squash is a nutritious, low-calorie vegetable that’s naturally rich in fiber, vitamin C, vitamin B6, and antioxidants that support digestion, immune health, and overall wellness. Its mild flavor and spaghetti-like strands make it a great alternative to refined grains like rice and pasta while helping you feel full and energized. Prepare spaghetti squash by cutting it in half and scraping out the seeds. Sprinkle it with olive oil, salt and pepper and roast in the oven for about 40-45 minutes, depending on the size of the squash. It’s ready when it pierces easily with a fork. Once cooled, use a fork to scrape out the “spaghetti” strands to use in place of any rice, pasta or potato!Try this Buffalo Chicken Spaghetti Squash or Spaghetti Squash Pizza for some ideas that might please even the pickiest eaters.
