Shrimp Bowls with Mango Salsa

Ingredients

For the Bowls:

1 lb large shrimp, peeled and deveined
1โ€“2 ripe avocados, sliced
1 large ripe mango, diced
2 cups cooked rice or quinoa
2-3 cups lettuce or other greens
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)

For the Lime-Chili Sauce:

1/4 cup plain Greek yogurt
1 tbsp mayonnaise
1 tsp chili powder
Zest and juice of 1 lime
1 tsp honey or agave
Salt and pepper to taste

For the Mango Salsa:

2 diced mangoes
1/4 cup diced red onion
1 small jalapeรฑo, finely chopped (optional)
Juice of 1 lime
1โ€“2 tbsp chopped fresh cilantro
Salt to taste

Instructions

1. In a large bowl, combine shrimp, olive oil, paprika, chili powder, garlic powder, salt, and pepper.
2. Sautee the shrimp for about 2-3 minutes on each side until they are cooked through.
3. Mix diced mango, red onion, jalapeno and chopped cilantro in a bowl. Drizzle with lime juice and season with salt and pepper.
4. Make the lime-chili sauce by whisking together Greek yogurt, mayonnaise, chili powder, lime zest and juice, honey, salt, and pepper. Adjust seasoning to taste
4. Assemble your bowl with mixed greens, rice, cooked shrimp, avocado and mango salsa.
5. Drizzle with sauce, serve and enjoy!
