Bell Peppers

Fresh food that TABLE families receive often throughout the summer is bell peppers. Bell peppers are highly nutritious and a great addition to your diet! 

Did you know green peppers are just red/orange/yellow peppers that haven’t yet ripened? This is why green peppers are a little less sweet. Keep that in mind when planning your recipes and meals. All of these peppers provide an array of nutrients, including protein, fiber, vitamins A, C, K, B6, potassium, and so much more. Our bodies can’t store vitamin C well which means we need to get it in our diet regularly for proper immune function, and metabolism, creating collagen, and protecting our bodies from cell damage.

Peppers are a great snack to cut in strips and dip in hummus or they can be an ingredient in so many recipes. Try these pesto stuffed peppers or this chicken stir fry for quick summertime dinners!
